It is estimated that the global population in 2050 will reach 10 billion. In order to meet the major challenge of the huge demand for protein, traditional protein such as meat will coexist with alternative protein, to complement each other in an inclusive, sustainable, healthy, and nutritious manner in the foreseeable future.
Alternative proteins are protein-rich components obtained from plants, insects, fungi, or through fermentation/tissue culture as an alternative to traditional animal protein sources. The alternative proteins empowered by science and technology aim to become a healthy and sustainable protein source, compared with the protein produced by traditional animal husbandry, to deal with potential crises such as food shortage and climate change.

This keynote speech will introduce the megatrends for future foods and how Buhler's Open Innovation boosts collaboration on the industrial value chain to provide solutions for end products.
The presentation introduces the plant-based journey of Givaudan and how to create a product with plant-based experience by co-creating with universities, institutes, and scouting and incubation platforms.
This session will brief the importance of fundamental research and its relationship to disruptive innovation. It will also provide alternative thinking for China's agri-food tech trends and ecosystem collaboration.
The so-called "artificial meat" can be generally divided into "plant protein meat" and "cell culture meat". At present, a large number of researches on artificial meat have been carried out all over the world. The key problems to be solved include the rational design and transformation of plant protein structure, flavor and nutrition, the large-scale acquisition of animal muscle cells and the large-scale low-cost culture of muscle tissue, as well as the foodization of plant protein meat and animal protein meat. Biotechnology can produce various food enzymes, protein scaffolds, nutrients, pigments, and flavor substances, which can realize the color, aroma, taste and shape of artificial meat, effectively improve the quality of artificial meat and reduce the production cost. In recent years, new resource proteins from more plants, the production of more proteins by microalgae and microorganisms, and the design and synthesis of functional proteins to improve food performance have provided more solutions to improve the quality of artificial meat and reduce production costs.

Jiangnan University, situated in Wuxi by beautiful Taihu Lake, is a national key "211 Project" university and is selected into "First-Class Discipline Project", falling under the Ministry of Education.
Jiangnan University's roots stretch back to 1902 when its predecessor, San Jiang Normal School, began its first term. In 1958, Jiangnan University began its independent existence as Wuxi Institute of Light Industry, which later merged with two other colleges in 2001, and was renamed as Jiangnan University by the Ministry of Education.
In the fourth round of National Discipline Assessment by the Ministry of Education, our Food Science and Technology and Light Industry Technology and Engineering was assessed at an 'A+' level and Design at an 'A-' level.
